  4. Place shredded lettuce in a bowl and pour in the vinaigrette.
  5. On a plate place the lettuce and spoon the crab mixture, sprinkle seafood seasoning and add extra coriander.

I remembered one I saw in an old cookbook and went for it! In another medium bowl, gently toss the crab with the celery, apple, walnuts and the remaining dressing. Transfer the watercress to plates, top with the crab salad and serve. Dice crab meat into small cubes, making them same approximate size as pineapple tidbits, combine together.
